Where Would You Be Without Your Liver?
Hail to Thee, O’ Liver!

We all know we have a liver, but few of us know what it does other than take up a lot of room under your right rib cage just next to your whatchamacallit. The poor liver. It’s overworked and underpaid. It does so many things yet receives very little recognition. Most of us are lucky that it doesn’t go on strike just to teach us a lesson!
If you were born before 1960, there’s a chance that when you think of liver, you think of onions then you think of running to your room and hiding under the bed until dinner is finished and the sun begins to rise in the morning. When I was a child, my mother made liver for dinner once in a while and what ended up on my plate sometimes managed to damage the prongs on my fork. How was anyone supposed to eat that stuff?
Well, Mom had the right idea, even if I didn’t appreciate it and even if she cooked it to death. Liver is a healthful food, and eating liver feeds your liver because liver as a food contains many important nutrients that our own livers love, including, but not limited to, vitamin A and vitamin D.
Why all the fuss over a healthy liver? Because the liver carries on more functions than any other organ. Just to give you an idea, it is responsible for: making cholesterol (which is a good thing because we need cholesterol in order to survive), breaking down fats, filtering toxins, creating hormones, eye health, making vitamin A from carotenes, and storing and regulating sugars.
Poorly functioning livers can cause:
- vision problems
- skin problems
- abnormal cholesterol readings
- hormonal imbalances
- digestion problems
- inability to use vitamins
- nervous system problems
- hepatitis
- toxic overload
- and all sorts of diseases
The liver loves certain foods, including beets, carrots, liver, cod liver oil, good fats (organic, unrefined oils and fats), raw organic butter, dandelion leaves, root vegetables, parsley and an herb called milk thistle (which has been scientifically shown to rebuild unhealthy livers). It also is fond of vitamin B-containing foods. The liver hates: artificial ingredients, foods that contain pesticides, alcohol, drugs and pollutants (whether you absorb them from your skin, your lungs or your diet).
