Thursday Nite Dinner: Silvia's Sexy Salsa Recipe

Looking to spice up the summer? How about Silvia’s Sexy Salsa recipe?

  • Organic Tomatoes – 4
  • Onion – 1/2 small (dice)
  • Vinegar: 1/2 teasp
  • Garlic – 1 clove
  • Organic Cilandro leaves and stems – 3 tablespoons
  • Olive oil – 2 teaspoons
  • Green chilies – 1
  • Fresh squeezed 1/4 organic lime
  • Salt and black pepper

In a food processor, blend the shallot, garlic, and cilantro until finely diced.
Halve the tomatoes, and add into the food processor. Process until the mixture is well blended, and coarsely chopped. Add in olive oil, salt, and pepper. Run the processor until it’s well mixed.
Finely dice up the green chilies and mix in with the sauce.

For extra umph, add an avocado and you’ve got guacomole! Olé!!
