Super Salad Recipe for Your Family

Vic Shayne, PhD

When I used to consult people on their nutrition in my office, one of the most common statements was, “I do eat healthy. I eat salads.” But a few minutes later it became clear that there’s a big misunderstanding about what makes a salad healthful. If you eat iceberg lettuce and dressing from a bottle, you’re not doing yourself or your family much good. If you eat spinach leaves that are not organic, you are actually eating poisons. But fear no more, for here’s a delicious salad recipe made from scratch.

All of the foods below should be organically grown, including the olive oil and honey mustard dressing. This recipe takes 15 minutes:

  • Use raw spinach leaves as the base for the salad.
  • Add 3/4 Pink Lady apple
  • Add handful walnuts
  • Add eight miniature carrots
  • Add 1/2 zucchini diced into small pieces
  • Add 2 slices of grilled turkey bacon diced into tiny pieces
  • Cover with olive oil and a small amount of Annie’s honey mustard
  • Mix well

That’s it! A super healthful salad that contains vitamin A, vitamin C, vitamin E, essential fatty acids, vitamin K, folate, carotenoids, enzymes, antioxidants chlorophyll and more.
